If you have a perfectly usable 2-sink vanity, however bland, keep it!
Here’s what we did to update a main bath without starting over:
After separating a dated built-in tub from the side of the vanity, we painted the dated beige vanity a sapphire blue (Sherwin Williams Seaworthy), added sleek polished nickel handles, (who said no handles work in a bathroom?), a clean white quartz countertop (bought by the square foot), under-mount rectangular porcelain sinks, and replaced the dated faucets. Out went the Hollywood ball lighting in lieu of 2 updated vanity lights and a custom-framed mirror (rather than keeping the builder-grade no-frame vanity mirror.)
To keep the original bathroom floor intact, post built-in tub removal, we used the new shower floor “guitar-pick” marble tile in the same footprint under the new free-standing egg-shaped tub.

Voila: An updated bathroom without starting over!
